Summer is here and elderflowers are out in a full force – it’s a perfect time for a foraging and preserving some summer for a cold season. The Elder plant is one fantastic herb, which has been used medicinally for hundreds of years. The flowers have both anti-cancerous and anti-inflammatory effects and help boost the immune system. I wanted to collect some elderflowers for the tea brewing as it’s not only delicious but helps to fight cold symptoms too! So we took a basket to carry our treasure, a pair of scissors and headed for a walk in nature.

Foraging Elderflowers
If you never been foraging before, elderflower is a good place to start. Clusters of tiny, creamy-white flowers are fairly easy to identify, but if you feel unsure, check the Woodland Trust guide on identifying and using Elderflowers. It is important to know details about this plant because it is not only beneficial but toxic too!
It is very important to collect Elderflowers on a dry day. Do not collect them after the rain as it washes out the nectar which holds all the power of the elderflower. Find Elderflowers away from busy roads, remove flower heads just below where all the small stems meet the main stem – you want as little of the green stem as possible. Gather only a few flowerheads from each tree so bees can enjoy them too and later, these will develop into berries – a crucial late summer food source for the wildlife.
Drying Elderflower
Converting small soft, creamy blooms to crispy dry is easier than you think. The most important part is not to wash them, as you don’t want to wash out the nectar. After taking home your treasure, shake off bugs, cut off flowers and lay out on a sheet of paper. Place it somewhere warm and dry, but shady, without direct sun and with good air circulation and wait until the petals dry out. When elderflowers have thoroughly dried out (it took me 2 days), pour them in a jar and here it is – your very special Zero Waste tea.
